Shanoff Shadows School Nutrition Services

On Thursday, September 21st, Dr. Shanoff suited up in a School Nutrition Services uniform at Harmony High, ready to get to work. Greeted by Adam Ojeada, the School Nutrition Services (SNS) manager, and other staff members, Dr. Shanoff was given his assignment for the morning and paired with Natasha Fritz, a Harmony High graduate and veteran SNS worker. Led by Natasha, Dr. Shanoff was shown the ropes of the kitchen and quickly put to work. “My three-and-a-half-hour experience was primarily around food prep and cleaning, sometimes working days in advance of food service just to ensure we had everything prepped,” said Dr. Shanoff of the experience. After the work, Dr. Shanoff and the team sat down to have lunch together before the first lunch service.  

Reflecting on his experience, Dr. Shanoff said, “I was struck by several things—how much the team at Harmony operated like Professional Learning Communities (PLCs) on the instructional side. Everyone was responsible for helping to plan, prepare, share, and evaluate how the systems and team worked, supporting each other through struggles, assisting where needed, and dealing with challenges in the moment.” He was also impressed with the kitchen design, noting, “I marveled at the use of space—specifically how our kitchens are designed to maximize the use of space in all kitchen areas. When we used sheets and racks for food preparation, we didn’t waste a centimeter of space. There were certain spatial configurations depending on the food item that our teams used. I never thought I would need to lean into “flip, slide, and turn” skills as much as I did.”  

Dr. Shanoff noted that he was most impressed with how the School Nutrition Services team valued their relationships with the students, saying, “We operate six lines at Harmony High School. Each line is staffed by an SNS team member. They operated their lines like we ask our teachers to operate their classrooms—greet every student, ask them how they are doing, encourage them to do their best, and, if needed, have a crucial conversation to help them become a better version of themselves. One SNS team member went so far as to compare students coming through their line as if they were guests in their home. How would we want our guests to feel? We want them to feel welcomed, comfortable, and happy.”

El jueves 21 de septiembre, el Dr. Shanoff se vistió con el uniforme de los Servicios de Nutrición Escolar en Harmony High, listo para ponerse a trabajar. Saludado por Adam Ojeada, el gerente de los Servicios de Nutrición Escolar (SNS, por sus siglas en inglés), y otros miembros del personal, el Dr. Shanoff recibió su asignación para la mañana y se unió a Natasha Fritz, una graduada de Harmony High y trabajadora veterana de SNS. Bajo la dirección de Natasha, el Dr. Shanoff aprendió algunos aspectos técnicos de la cocina y se puso rápidamente manos a la obra. "Mi experiencia de tres horas y media se centró principalmente en la preparación de alimentos y la limpieza, a veces trabajando días antes del servicio de alimentos sólo para asegurarse de que teníamos todo preparado", expresó el Dr. Shanoff de la experiencia. Después del trabajo, el Dr. Shanoff y el equipo se sentaron a almorzar juntos antes del primer servicio de almuerzo.

Reflexionando sobre su experiencia, el Dr. Shanoff expresó: "Me llamaron la atención varias cosas: hasta qué punto el equipo de Harmony funcionaba como Comunidades Profesionales de Aprendizaje (Professional Learning Communities, PLC) en el aspecto instructivo. Todos eran responsables de ayudar a planificar, preparar, compartir y evaluar cómo funcionaban los sistemas y el equipo, apoyándose mutuamente en las dificultades, ayudando cuando era necesario y afrontando los retos en el momento". También le impresionó el diseño de las cocinas: "Me maravilló el uso del espacio, en concreto cómo están diseñadas nuestras cocinas para aprovechar al máximo el espacio en todas las zonas de la cocina. Cuando utilizábamos planchas y bastidores para preparar la comida, no desperdiciábamos ni un centímetro de espacio. Había determinadas configuraciones espaciales en función del alimento que utilizaban nuestros equipos. Nunca pensé que necesitaría recurrir a las habilidades de "voltear, deslizar y girar" tanto como lo hice".

El Dr. Shanoff señaló que lo que más le impresionó fue la forma en que el equipo de Servicios de Nutrición Escolar valoraba sus relaciones con los estudiantes: "Tenemos seis líneas en Harmony High School. Cada línea es atendida por un miembro del equipo SNS. Operan sus líneas como pedimos a nuestros maestros que operen sus salones de clase: saludan a cada estudiante, les preguntan cómo les va, les animan a dar lo mejor de sí mismos y, si es necesario, tienen una conversación crucial para ayudarles a convertirse en una mejor versión de sí mismos". Un miembro del equipo de SNS llegó a comparar a los estudiantes que pasaban por su línea como si fueran huéspedes en su casa. ¿Cómo queremos que se sientan nuestros invitados? Queremos que se sientan bienvenidos, cómodos y felices".
